Julie at the Rolla Expo

Pump Over

We brought Noiret grapes into the winery yesterday morning.  With red grapes, instead of pressing the juice out right away, we simply destem the grapes and pump the rest into open-top tanks.  Then yeast is added and the wine ferments in contact with the skins and seeds.
