Steelhead Trout

Have you tried Steelhead Trout before?  It’s delicious.  It looks a lot like salmon in coloration but the flavor is lighter.  The filets are slightly less meaty than salmon too, but they are well worth a try!  Julie brought some home the other day and I tried out an idea that we’ve kicked around our kitchen earlier this season.

Since it’s been waaaay too cold to grill outdoors, I’ve been trying a bunch of new oven-based recipes for cooking fish.  This recipe was inspired by two other recipes.  I’m sorry I didn’t measure anything, so be prepared to give your sauce a little try before smearing it on your fish.

Trout with Sriracha

Steelhead Trout fillet(s)

approximately 2/3  cup Whittenburg

approx. 1 cup plain yogurt

approximately 2 teaspoons sriracha (an oriental hot sauce)

approximately 1 tablespoon montreal steak seasoning (or just salt & pepper)

optional cilantro

Directions:

Spray a 13X9 inch casserole dish with cooking oil.  Place fish, skin side down, into the dish.  Pour the whittenburg over the top of the fish and let it marinate at room temperature while you prepare the topping.

In a small bowl stir the yogurt with the sriracha & the montreal steak seasoning.  Be sure to add the seasonings a little at a time and test it to make sure you like it.  The sriracha is pretty hot, so go in little increments if you are a spice whimp like I am!  The final topping that I came up with was tangy with a bit of heat, but not too much.  Once the topping is to your taste, smear it over the top of the fish.  (I think sprinkling cilantro over this would be excellent at this point too, but I haven’t tried that little twist yet.)

Now put your uncovered fish in a 375 degree oven for 10-15 minutes or until the fish is cooked through.  Fast and delicious – my favorite things when it comes to cooking!

    The website is lovely. Photo of trees at dusk reflected in water is special. Whose is it?

    I’ll be looking for steelhead trout.
